This is a really interesting one! We at Wine Circle are really very fortunate to stock this outstanding Agusti Torello Mata Balsamic vinegar.

Agusti Torello Mata is a Spanish sparkling wine maker with a reputation for excellence in hand-made Cava. The top end “Kripta” comes in an amphora shaped bottle and has been described as “drinking clouds”.

The Cavas from this house have also been featured on the wine lists of some of the top restaurants in the world including the currently second in the world rated “Can Roca”.

These restaurants approached Sr Torello and asked if he could supply artisan Cava Vinegar.

Agusti Torello Mata Cava uses traditional, local grape varieties: Macabeo, Xarello and Perellada. They use this Cava to make their barrel-aged naturally fermented vinegars.

The whole process takes several years – 18 months to make the Cava (some of this in French Oak), then it is acidified and barrel aged for another 8 months. Then it is transferred to American Oak for another year.

The resulting vinegars have excellent flavour with plenty of upfront fruit and an effervescent mouth feel.

You can imagine how these would work with everything from oysters to roasted potatoes to a fresh green salad and the vinegars work beautifully in any vinaigrette.
